How to make it
- In a large bowl, beat the eggs with an electric mixer on high speed until pale and thick, about 3 minutes, then gradually add the powdered sugar and beat for a further 10 minutes until very light.
- Beat in the softened butter, then sift together the flour, baking powder and salt and fold them in to form a stiff, smooth dough.
- Wrap the dough and chill it for at least 1 hour so it firms up enough to take a clean impression.
- Lightly flour the work surface, roll the dough to about 1 cm thick, then press a floured springerle mould or carved rolling pin firmly into it to emboss the designs and cut the cookies apart.
- Scatter the anise seeds over a greased baking tray and set the cookies on top, then leave them uncovered at room temperature for 12 to 24 hours so the surface dries and sets the pattern.
- Preheat the oven to 150C and bake the cookies for 15 to 20 minutes, until firm and barely coloured on top with pale golden bases.
- Cool completely on a rack, then store in an airtight tin for a few days to soften, as the flavour and texture improve with age.
