How to make it

  1. Take the steaks out of the refrigerator about 30 minutes before cooking, pat them dry, and season generously on both sides with salt and pepper.
  2. Slice the button mushrooms, dice the onion, and finely mince the garlic so everything is ready before you start.
  3. Heat the olive oil in a large skillet over medium-high heat until just smoking, then sear the steaks for about 4 to 5 minutes per side for medium-rare, reaching an internal temperature of 135 F, and transfer them to a plate to rest.
  4. Lower the heat to medium, add the butter to the same pan, and cook the diced onion for 2 to 3 minutes until softened.
  5. Add the sliced mushrooms and a pinch of salt, then cook for 6 to 8 minutes, stirring occasionally, until they release their liquid and turn golden brown.
  6. Stir in the minced garlic and cook for 1 minute more until fragrant, scraping up any browned bits from the bottom of the pan.
  7. Spoon the mushrooms and their pan juices over the rested steaks and serve immediately.
