Steak and Mushrooms

How to make it
- Take the steaks out of the refrigerator about 30 minutes before cooking, pat them dry, and season generously on both sides with salt and pepper.
- Slice the button mushrooms, dice the onion, and finely mince the garlic so everything is ready before you start.
- Heat the olive oil in a large skillet over medium-high heat until just smoking, then sear the steaks for about 4 to 5 minutes per side for medium-rare, reaching an internal temperature of 135 F, and transfer them to a plate to rest.
- Lower the heat to medium, add the butter to the same pan, and cook the diced onion for 2 to 3 minutes until softened.
- Add the sliced mushrooms and a pinch of salt, then cook for 6 to 8 minutes, stirring occasionally, until they release their liquid and turn golden brown.
- Stir in the minced garlic and cook for 1 minute more until fragrant, scraping up any browned bits from the bottom of the pan.
- Spoon the mushrooms and their pan juices over the rested steaks and serve immediately.
