How to make it
- Melt the beef dripping or butter in a large heavy-based pan over medium heat, add the sliced onions and cook for 8 to 10 minutes until soft and golden.
- Add the sliced potatoes and turn them through the onions and fat so they are well coated.
- Pour in the beef stock, season with seasoning salt, black pepper and the allspice or nutmeg, then bring to a gentle simmer.
- Cover the pan tightly and cook over low heat for 30 to 40 minutes, stirring occasionally, until the potatoes are very soft and most of the liquid has been absorbed.
- Stir in the shredded cooked beef or lamb and heat through for a further 8 to 10 minutes until piping hot throughout.
- Roughly mash some of the potatoes against the side of the pan to thicken the mixture while leaving plenty of chunks for texture.
- Check the seasoning, stir through the chopped parsley and serve hot with oatcakes or crusty bread.
