Stuffed Squash

How to make it
- Preheat the oven to 200 C (400 F) and halve each squash from stem to base, scooping out the seeds and stringy pulp.
- Brush the cut sides with olive oil, season with salt, and place the halves cut-side down on a lined baking sheet, then roast for about 35 to 40 minutes until the flesh is fork-tender.
- While the squash roasts, finely chop the onion and saute it in the almond oil over medium heat until soft and translucent, about 5 minutes.
- Stir the rice pilaf mix into the onion to toast lightly, then add the water or broth, bring to a boil, cover, and simmer until the rice is tender and the liquid is absorbed, about 18 to 20 minutes.
- Toast the slivered almonds in a dry pan over medium heat until golden and fragrant, then fold them into the cooked pilaf along with the red pepper flakes and salt to taste.
- Turn the roasted squash halves cut-side up and spoon the warm pilaf into the hollows, mounding it generously.
- Return the stuffed squash to the oven for 8 to 10 minutes to heat through, then garnish with chopped parsley and serve.
