How to make it

  1. Preheat the oven to 200 C (400 F) and halve each squash from stem to base, scooping out the seeds and stringy pulp.
  2. Brush the cut sides with olive oil, season with salt, and place the halves cut-side down on a lined baking sheet, then roast for about 35 to 40 minutes until the flesh is fork-tender.
  3. While the squash roasts, finely chop the onion and saute it in the almond oil over medium heat until soft and translucent, about 5 minutes.
  4. Stir the rice pilaf mix into the onion to toast lightly, then add the water or broth, bring to a boil, cover, and simmer until the rice is tender and the liquid is absorbed, about 18 to 20 minutes.
  5. Toast the slivered almonds in a dry pan over medium heat until golden and fragrant, then fold them into the cooked pilaf along with the red pepper flakes and salt to taste.
  6. Turn the roasted squash halves cut-side up and spoon the warm pilaf into the hollows, mounding it generously.
  7. Return the stuffed squash to the oven for 8 to 10 minutes to heat through, then garnish with chopped parsley and serve.
