Sudanese Ful Medames

How to make it
- Rinse the dried fava beans, cover them generously with cold water and soak overnight, or for at least 8 hours, then drain.
- Put the soaked beans in a large pot with the 6 cups of fresh water, bring to a boil, then lower the heat and simmer partly covered for 1 1/2 to 2 hours until the beans are very soft, topping up with hot water if the level drops too low.
- Crush the garlic to a paste with a pinch of salt and stir it into the pot along with the ground cumin and ground coriander during the last 10 minutes of cooking.
- Using a fork or potato masher, coarsely mash about half of the beans against the side of the pot so the dish thickens but still has plenty of whole beans and a loose, soupy consistency.
- Season with salt to taste and stir in most of the lemon juice, tasting and adjusting the cumin and lemon until it is bright and savory.
- Spoon the warm ful into bowls, make a well in the center of each and pour the olive oil over the top, finishing with the remaining lemon juice.
- Serve immediately with warm flatbread for scooping, and offer extra olive oil and cumin at the table.
