How to make it

  1. Rinse the dried fava beans, cover them generously with cold water and soak overnight, or for at least 8 hours, then drain.
  2. Put the soaked beans in a large pot with the 6 cups of fresh water, bring to a boil, then lower the heat and simmer partly covered for 1 1/2 to 2 hours until the beans are very soft, topping up with hot water if the level drops too low.
  3. Crush the garlic to a paste with a pinch of salt and stir it into the pot along with the ground cumin and ground coriander during the last 10 minutes of cooking.
  4. Using a fork or potato masher, coarsely mash about half of the beans against the side of the pot so the dish thickens but still has plenty of whole beans and a loose, soupy consistency.
  5. Season with salt to taste and stir in most of the lemon juice, tasting and adjusting the cumin and lemon until it is bright and savory.
  6. Spoon the warm ful into bowls, make a well in the center of each and pour the olive oil over the top, finishing with the remaining lemon juice.
  7. Serve immediately with warm flatbread for scooping, and offer extra olive oil and cumin at the table.
