Sushi Rice

How to make it
- Place the rice in a bowl and rinse under cold running water, swirling and draining several times until the water runs nearly clear, then drain well in a sieve for 15 minutes.
- Put the drained rice in a heavy pot with the measured water, the sake and the piece of kombu, and let it soak for 20 to 30 minutes.
- Cover and bring to a boil over medium-high heat, then reduce to low and cook for 12 minutes without lifting the lid; remove the kombu and let the rice stand off the heat, still covered, for 10 minutes to steam.
- While the rice cooks, gently warm the rice vinegar, sugar and salt in a small pan, stirring just until the sugar and salt dissolve, then let the dressing cool.
- Tip the hot rice into a wide, shallow non-metallic bowl and pour the vinegar dressing evenly over it.
- Using a wooden paddle or spatula, fold and slice through the rice with gentle cutting motions to coat every grain without crushing them.
- Fan the rice as you fold to cool it quickly to body temperature, which gives it a glossy sheen, then cover with a damp cloth until ready to use.
