Sweet and Sour Grilled Tuna

How to make it
- In a small saucepan, whisk together the ketchup, rice wine vinegar, brown sugar, soy sauce, minced garlic and grated ginger.
- Bring the mixture to a gentle simmer over medium heat and cook for 3 to 4 minutes until slightly thickened and glossy, then set aside to cool.
- Pat the tuna steaks dry, brush them all over with peanut oil, and brush a few spoonfuls of the cooled sauce over both sides, reserving the rest for serving.
- Heat a grill or grill pan to high until very hot, lightly oil the grates to prevent sticking.
- Grill the tuna for about 1 to 2 minutes per side for rare to medium-rare with a seared crust and a pink center, or longer if you prefer it cooked through to 63 C.
- Transfer the tuna to a board and let it rest for 2 minutes, then slice thickly against the grain.
- Drizzle with the reserved sweet and sour sauce and garnish with sliced green onions and toasted sesame seeds before serving.
