How to make it

  1. Rinse the bulgur, then place it in a bowl and cover with about 1 cup of cold water; let it soak for 20 to 30 minutes until tender, then drain well and squeeze out any excess moisture.
  2. While the bulgur soaks, wash and thoroughly dry the parsley and mint, then finely chop both and place them in a large mixing bowl.
  3. Dice the tomatoes and both bell peppers into small even pieces and thinly slice the green onions, then add them to the herbs.
  4. Add the drained bulgur to the bowl with the vegetables and herbs.
  5. In a small bowl, whisk together the olive oil, lemon juice, salt, and ground black pepper to make the dressing.
  6. Pour the dressing over the salad and toss gently until everything is evenly coated.
  7. Cover and refrigerate for at least 30 minutes to let the bulgur absorb the flavors, then taste and adjust the salt and lemon before serving chilled.
