How to make it
- Rinse the bulgur, then place it in a bowl and cover with about 1 cup of cold water; let it soak for 20 to 30 minutes until tender, then drain well and squeeze out any excess moisture.
- While the bulgur soaks, wash and thoroughly dry the parsley and mint, then finely chop both and place them in a large mixing bowl.
- Dice the tomatoes and both bell peppers into small even pieces and thinly slice the green onions, then add them to the herbs.
- Add the drained bulgur to the bowl with the vegetables and herbs.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and ground black pepper to make the dressing.
- Pour the dressing over the salad and toss gently until everything is evenly coated.
- Cover and refrigerate for at least 30 minutes to let the bulgur absorb the flavors, then taste and adjust the salt and lemon before serving chilled.
