How to make it

  1. Rinse the bulgur, then soak it in cool water for about 15 minutes until softened but still slightly firm, and drain off any excess by squeezing it gently.
  2. Wash the parsley and mint well, dry them thoroughly, and chop them very finely with a sharp knife.
  3. Finely dice the tomatoes and slice the green onions thinly, letting some of the tomato juices mix in to flavor the bulgur.
  4. In a large bowl, combine the drained bulgur, parsley, mint, green onions, and tomatoes.
  5. Whisk together the lemon juice, olive oil, and salt to taste, then pour the dressing over the salad and toss thoroughly to coat.
  6. Let the tabbouleh rest for 15 to 20 minutes so the bulgur absorbs the lemon and juices, then taste and adjust the salt and lemon before serving chilled or at room temperature.
