How to make it
- Stir the yeast and sugar into the warm water (about 40C, no hotter or it will kill the yeast) and let it sit for 5 to 10 minutes until foamy.
- In a large bowl whisk together the all-purpose flour, whole-wheat flour and salt, then make a well in the center.
- Pour the yeast mixture and olive oil into the well and mix until a shaggy dough forms, then turn out and knead for 8 to 10 minutes until smooth and elastic.
- Place the dough in an oiled bowl, cover with a damp cloth, and let rise in a warm spot for about 1 to 1 1/2 hours until doubled in size.
- Knock back the dough, divide into 4 equal pieces, shape each into a ball, then rest covered for 15 minutes and roll or stretch each into a round about 1 cm thick.
- Heat a heavy skillet, baking stone or domed taboon over high heat until very hot, and dimple the surface of each round with your fingertips.
- Bake each bread for 2 to 3 minutes per side until puffed and golden-brown blisters appear, then wrap in a clean towel to keep soft while you finish the rest.
