How to make it
- Set a small dry frying pan over medium-low heat and toast the fenugreek seeds and onion seeds for about 1 to 2 minutes, shaking the pan constantly, until they smell fragrant and just begin to darken.
- Tip the toasted seeds onto a plate to stop the cooking and let them cool completely, as grinding them warm can make the spice blend clump.
- Grind the cooled seeds to a fine powder using a spice grinder or a mortar and pestle.
- Transfer the ground seeds to a bowl and add the cumin, coriander, garam masala, curry powder, turmeric, paprika, ground ginger, garlic powder and salt.
- Whisk everything together thoroughly so the colors and aromas are evenly distributed throughout the blend, breaking up any lumps with the back of a spoon.
- Use straight away to coat chicken or paneer for tandoori dishes, typically mixed with yogurt and lemon juice, or store in an airtight jar away from light and heat for up to three months.
