How to make it

  1. Use day-old rice and break up any clumps with your fingers so the grains separate and fry cleanly rather than steaming into mush.
  2. Heat the oil in a wok over high heat, add the chopped garlic and diced onion, and stir for about 1 minute until fragrant and softened.
