How to make it

  1. Peel and devein the shrimp, reserving the shells, then simmer the shells in the stock for 10 minutes and strain to deepen the flavor before discarding them.
  2. Bruise the lemongrass with the flat of a knife and cut into 5 cm lengths, then add it with the galangal slices and torn kaffir lime leaves to the strained stock and bring to a gentle boil so the aromatics release their oils.
  3. Stir in the roasted chili paste, halved mushrooms and cherry tomatoes, then simmer for 4 to 5 minutes until the mushrooms soften and the broth turns fragrant and slightly red.
  4. Add the shrimp and cook for 2 to 3 minutes, just until they are fully pink and opaque all the way through with no translucent gray center, then taking care not to overcook them into rubber.
  5. Remove the pot from the heat, then stir in the fish sauce, sugar and lightly crushed bird's eye chilies and let it sit off the burner for a minute so the heat and aromatics settle.
  6. Finish with the lime juice off the heat to keep it bright, taste and balance the hot, sour, salty and savory notes, then garnish with torn cilantro and serve immediately.
