How to make it

  1. Warm the olive oil in a large pot over medium heat and soften the diced onion for about 5 minutes until translucent, then add the minced garlic and chopped bell pepper and cook for a further 3 minutes.
  2. Stir in the cumin and oregano and let them toast for thirty seconds until fragrant.
  3. Add the peeled and cubed butternut squash along with the diced tomatoes and the vegetable stock, then bring to a gentle simmer.
  4. Cover and cook for about 20 minutes, until the squash is just tender when pierced with a fork.
  5. Stir in the pinto beans and corn kernels and simmer uncovered for another 10 minutes so the flavors meld and the stew thickens slightly.
  6. Season generously with salt and black pepper, then ladle into bowls and finish with a scatter of fresh chopped cilantro.
