How to make it
- Warm the olive oil in a large pot over medium heat and soften the diced onion for about 5 minutes until translucent, then add the minced garlic and chopped bell pepper and cook for a further 3 minutes.
- Stir in the cumin and oregano and let them toast for thirty seconds until fragrant.
- Add the peeled and cubed butternut squash along with the diced tomatoes and the vegetable stock, then bring to a gentle simmer.
- Cover and cook for about 20 minutes, until the squash is just tender when pierced with a fork.
- Stir in the pinto beans and corn kernels and simmer uncovered for another 10 minutes so the flavors meld and the stew thickens slightly.
- Season generously with salt and black pepper, then ladle into bowls and finish with a scatter of fresh chopped cilantro.
