How to make it
- Place the crushed munich, crystal 20, black, and chocolate malts in a muslin grain bag and steep in 8 litres of water as it heats slowly to 70 C, holding for about 20 minutes, then lift out the bag and let it drain without squeezing.
- Remove the pot from the heat and stir in the malt extract until fully dissolved, then return to a boil, watching closely to avoid a boil-over.
- Add the bittering hops and boil steadily for 45 minutes, then stir in the honey and continue boiling for 10 more minutes.
- Add the aroma hops for the final 5 minutes of the boil, then remove from the heat and cool the wort as quickly as possible to below 24 C using an ice bath.
- Transfer the cooled wort to a sanitised fermenter, top up with cool water to reach 12 litres total, aerate well, and pitch the ale yeast.
- Seal with an airlock and ferment at 18 to 20 C for about two weeks until fermentation activity stops and the gravity is stable.
- Dissolve the priming sugar in a little boiled water, gently mix it into the beer, then bottle and cap, conditioning at room temperature for two weeks before chilling and serving.
