How to make it

  1. Toast the coriander and cumin seeds in a dry skillet over medium heat for 1 to 2 minutes, shaking the pan, until fragrant, then grind them to a fine powder.
  2. Soak the dried red chillies in warm water for 10 minutes to soften, then drain and roughly chop, removing seeds for a milder paste if preferred.
  3. Trim the lemongrass to the tender lower stalks, peel off the tough outer layers, and finely slice the inner core.
  4. Add the ground spices, soaked chillies, lemongrass, ginger, turmeric, garlic, shallots and salt to a mortar or food processor.
  5. Pound or blend the mixture into a smooth, thick paste, scraping down the sides and adding a teaspoon of water at a time only if needed to keep it moving.
  6. Transfer the finished paste to a clean airtight jar; use immediately or refrigerate for up to two weeks, or freeze in small portions for longer storage.
