How to make it

  1. Preheat the oven to 190 C and lightly butter a medium baking dish.
  2. Peel, core and slice the apples, then toss them in a saucepan with 100 g of the sugar, the cinnamon and the water.
  3. Stir the cornstarch into a little cold water to make a slurry, add it to the apples and cook over medium heat for about 5 minutes until the apples soften slightly and the juices thicken, then tip into the baking dish.
  4. For the topping, whisk the flour, baking powder, salt and remaining 50 g of sugar in a bowl, then rub in the cold butter with your fingertips until the mixture resembles coarse crumbs.
  5. Beat the egg with the milk and stir into the flour mixture just until a soft, lumpy batter forms.
  6. Drop spoonfuls of the topping over the hot fruit, leaving gaps for the fruit to bubble through.
  7. Bake for 30 to 35 minutes until the topping is risen, golden and cooked through, then let it rest for 10 minutes before serving warm.
