Apple Pie I

How to make it
- Sift the flour and salt into a bowl, then rub in the chilled lard and margarine with your fingertips until the mixture resembles fine breadcrumbs.
- Sprinkle in the cold water a tablespoon at a time and bring the mixture together into a firm dough, then wrap and chill it for 30 minutes.
- Toss the sliced apples with the lemon juice, sugar and cinnamon until evenly coated, and preheat the oven to 200 C (400 F).
- Divide the chilled pastry in two, roll out the larger piece and line a 22 cm pie dish, then pile in the apple mixture and dot the top with the salted butter.
- Roll out the remaining pastry for the lid, brush the rim of the base with water, lay the lid over the filling, then trim and crimp the edges to seal.
- Brush the top with milk, cut a couple of small slits in the centre to let steam escape, and sprinkle with a little extra sugar.
- Bake for 40 to 45 minutes until the pastry is golden and the apples are tender when pierced through a slit, then cool slightly before serving.
