Apple Pie I

How to make it

  1. Sift the flour and salt into a bowl, then rub in the chilled lard and margarine with your fingertips until the mixture resembles fine breadcrumbs.
  2. Sprinkle in the cold water a tablespoon at a time and bring the mixture together into a firm dough, then wrap and chill it for 30 minutes.
  3. Toss the sliced apples with the lemon juice, sugar and cinnamon until evenly coated, and preheat the oven to 200 C (400 F).
  4. Divide the chilled pastry in two, roll out the larger piece and line a 22 cm pie dish, then pile in the apple mixture and dot the top with the salted butter.
  5. Roll out the remaining pastry for the lid, brush the rim of the base with water, lay the lid over the filling, then trim and crimp the edges to seal.
  6. Brush the top with milk, cut a couple of small slits in the centre to let steam escape, and sprinkle with a little extra sugar.
  7. Bake for 40 to 45 minutes until the pastry is golden and the apples are tender when pierced through a slit, then cool slightly before serving.
