How to make it

  1. Whisk the flour, salt and sugar together in a bowl, then make a well in the centre and crack in the eggs.
  2. Gradually pour in the milk while whisking, drawing the flour in from the edges, until you have a smooth, thin batter with no lumps, then whisk in the melted butter.
  3. Cover the batter and let it rest at room temperature for at least 30 minutes so the flour hydrates and the crêpes turn out tender.
  4. Heat a non-stick pan over medium heat and wipe it with a lightly oiled paper towel, then pour in a small ladle of batter and immediately swirl the pan so it coats the base in a thin even layer.
  5. Cook for about 1 minute until the underside is golden and the edges lift, then flip and cook the other side for 20 to 30 seconds more.
  6. Slide the crêpe onto a plate and repeat with the remaining batter, stacking them as you go, then serve with your choice of sweet or savoury fillings.
