How to make it

  1. Pat the flathead fillets dry with paper towels and season both sides with salt and black pepper.
  2. Spread the plain flour on a plate and dredge each fillet lightly, shaking off any excess so only a thin coating remains.
  3. Heat 2 tablespoons of the olive oil in a large frying pan over medium-high heat until shimmering, then add the fillets and cook for 2 to 3 minutes per side until golden and the flesh is opaque and flakes easily.
  4. Transfer the cooked fillets to a warm plate and tent loosely with foil.
  5. Reduce the heat to medium, add the remaining olive oil and the butter to the pan, then add the thinly sliced garlic and chopped rosemary and cook for about 1 minute until fragrant but not browned.
  6. Pour in the brown vinegar and let it bubble for 30 seconds, scraping up any browned bits to form a quick pan sauce.
  7. Spoon the warm rosemary garlic sauce over the fillets and serve immediately with lemon wedges on the side.
