How to make it
- Preheat the oven to 175 C / 350 F and line an 8-inch square baking pan with parchment paper, leaving an overhang for easy lifting.
- Toss the diced apples with the lemon juice in a small bowl to keep them bright and to add a little tartness.
- In a large bowl, whisk the melted butter with the brown sugar until smooth, then beat in the egg and vanilla until glossy.
- Add the flour, baking powder, salt, cinnamon, ginger, and nutmeg, stirring just until a thick batter forms, then fold in the apples until evenly distributed.
- Spread the batter into the prepared pan, smoothing the top, and bake for 30 to 35 minutes until the top is set and a toothpick inserted in the center comes out with only a few moist crumbs.
- Let the bars cool completely in the pan, then lift out using the parchment and cut into squares before serving.
