How to make it

  1. Set the frozen raspberries aside in a bowl to take the deep chill off while you start the caramel; do not fully thaw them.
  2. Combine the sugar and water in a deep, heavy saucepan over medium heat and cook without stirring, swirling the pan occasionally, until the sugar melts and turns a deep amber, about 6 to 8 minutes.
  3. Carefully add the butter and stir until melted, then pour in the heavy cream in a slow stream; the caramel will bubble up vigorously, so stand back and keep stirring until smooth.
  4. Add the raspberries and the pinch of salt, then simmer over medium-low heat for 4 to 5 minutes, stirring gently, until the berries break down and release their juice.
  5. For a smooth sauce, press the mixture through a fine-mesh sieve to remove the seeds, or leave it rustic with the seeds in.
  6. Stir in the vanilla and let the sauce cool slightly until it thickens to a pourable, glossy consistency.
  7. Spoon the warm sauce over ice cream, fresh fruit, cheesecake or pound cake; it can also be refrigerated up to 5 days and gently rewarmed before serving.
