How to make it
- Peel, core and dice the pineapple into bite-sized chunks and pat them dry with a towel so they caramelize rather than steam.
- Split the vanilla bean lengthwise and scrape out the seeds, reserving both the seeds and the pod.
- Melt the butter in a large skillet over medium-high heat, then stir in the brown sugar and let it dissolve into a bubbling caramel.
- Add the pineapple along with the vanilla seeds and pod and cook, stirring occasionally, for 6 to 8 minutes until the fruit is golden and glazed.
- Carefully pour in the dark rum and let it cook off for about a minute, standing back as it may flame briefly.
- Stir in the heavy cream and a pinch of salt and simmer for 2 to 3 minutes until the sauce is smooth and slightly thickened.
- Remove the vanilla pod and serve the caramelized pineapple warm, on its own or over ice cream.
