How to make it
- Heat the oven to 180 C (350 F) and grease a medium baking dish or 20 cm square pan.
- Peel and finely grate the carrots and the cooking apple, tossing the apple with the lemon juice to keep it from browning.
- In a large bowl, beat the eggs with the sugar until pale, then whisk in the melted butter, orange zest and orange juice.
- Stir in the grated carrot and apple, then fold in the flour and salt until evenly combined into a loose batter.
- Pour the mixture into the prepared dish and spread it level.
- Bake for 45 to 55 minutes, until set, golden on top and a knife inserted in the centre comes out clean.
- Let the kugel rest for 10 minutes before cutting into squares to serve warm.
