Stuffed Zucchini

How to make it
- Preheat the oven to 190 C (375 F) and lightly oil a baking dish that will hold the zucchini snugly.
- Halve the zucchini lengthwise, scoop out the centres with a spoon to leave sturdy shells, and finely chop the scooped-out flesh.
- Thaw the frozen spinach and squeeze it dry, then finely chop the onion, mushrooms and garlic.
- Heat the olive oil in a pan and saute the onion, garlic and mushrooms until soft, add the chopped zucchini flesh and spinach, and cook until the moisture has evaporated.
- Remove from the heat, let cool for a few minutes, then mix in the beaten eggs, half the cheese, and the salt and pepper to bind the filling.
- Arrange the zucchini shells in the dish, spoon the filling generously into each one, and scatter the remaining cheese over the top.
- Bake for 25 to 30 minutes, until the zucchini are tender and the filling is set and golden, then serve warm.
