Bean and Green Chili Soup

How to make it
- Finely chop the onion and mince the garlic. Drain and rinse the black beans in a colander under cold running water.
- Warm the oil in a large saucepan over medium heat, add the onion and cook for 4 to 5 minutes until soft and translucent, then stir in the garlic and cumin and cook for another minute until fragrant.
- Stir in the refried beans and green salsa, breaking up the refried beans with a spoon, then gradually pour in the vegetable broth and whisk until you have a smooth, even soup base.
- Add the drained black beans and bring the soup to a gentle simmer, then cook uncovered for about 15 minutes, stirring now and then, until slightly thickened and well flavored.
- Stir in the cooked rice and let it warm through for 2 to 3 minutes, then taste and adjust the salt; loosen with a splash more broth if the soup is thicker than you like.
- Ladle the soup into bowls, top each with a spoonful of sour cream and a scattering of chopped cilantro, and serve hot.
