How to make it

  1. In a large bowl, stir together the plain flour and salt, then cut in the cold margarine and lard with a pastry blender until the mixture resembles coarse crumbs.
  2. Sprinkle in the cold water a tablespoon at a time, tossing with a fork, until the dough just holds together, then divide it in two, shape into disks, wrap and chill for at least 30 minutes.
  3. Peel, core and thinly slice the McIntosh apples and toss them in a bowl with the sugar, cinnamon, the 2 tablespoons of flour and the lemon juice.
  4. Heat the oven to 425 F (220 C) and roll out one pastry disk on a floured surface to line a 9 inch pie plate.
  5. Pile the apple filling into the crust, mounding it slightly, and dot the top with small pieces of butter.
  6. Roll out the second disk, lay it over the filling, trim and crimp the edges to seal, and cut a few vents in the top to let steam escape.
  7. Bake for 15 minutes at 425 F, then reduce the heat to 350 F (175 C) and bake for another 40 to 45 minutes until the crust is golden and the filling is bubbling.
  8. Cool the pie on a wire rack for at least 2 hours so the filling sets before slicing.
