Aubergine and Onion Vegetable Pie

How to make it
- Make the pastry by rubbing the medium-soft butter into the flour and salt until crumbly, then mix in the egg and just enough lukewarm water to form a smooth dough; wrap and chill it for 30 minutes.
- Cut the aubergines into 1 cm cubes, toss with a little salt, leave for 15 minutes to draw out moisture, then pat dry.
- Heat the olive oil in a large pan and fry the sliced onions and crushed garlic until soft and golden, then add the aubergine cubes and cook until tender and lightly browned, about 10 minutes.
- Stir in the chopped tomatoes, oregano and a good grinding of black pepper, then simmer for 10 to 12 minutes until the mixture is thick and most of the liquid has evaporated; let it cool slightly.
- Preheat the oven to 190 C (375 F) and roll out two-thirds of the pastry to line a greased 23 cm pie dish.
- Spoon in the aubergine filling, scatter over the grated cheese, then roll out the remaining pastry, lay it over the top, seal and crimp the edges and cut a couple of slits in the lid to let steam escape.
- Brush the top with a little beaten egg and bake for 35 to 40 minutes until the pastry is golden and crisp, then let the pie settle for 10 minutes before slicing.
