How to make it
- Preheat the oven to 175 C (350 F) and grease and line a 23 by 13 cm loaf tin with parchment paper.
- In a bowl, whisk together the flour, baking powder, baking soda and salt and set aside.
- In a separate large bowl, cream the softened butter with the turbinado sugar until light and fluffy, then beat in the eggs one at a time followed by the vanilla.
- Mix in the mashed banana until well combined; the batter may look slightly curdled, which is fine.
- Add the dry ingredients to the wet and fold gently with a spatula just until no dry streaks remain, taking care not to overmix, then fold in most of the chopped walnuts.
- Pour the batter into the prepared tin, scatter the reserved walnuts over the top, and bake for 55 to 65 minutes until risen, golden and a skewer inserted in the centre comes out clean.
- Let the loaf cool in the tin for 10 minutes, then turn out onto a wire rack to cool completely before slicing.
