How to make it
- Soak the leaf gelatine in a bowl of cold water for about 5 minutes until soft and floppy, then lift out and gently squeeze away the excess water.
- Dissolve the softened gelatine in the warm water, stirring until completely clear with no visible threads, and set aside to cool slightly but not set.
- Peel the bananas and mash them with the lemon juice to a smooth purée, the lemon keeping the colour bright and preventing browning.
- Whip the double cream with the caster sugar and vanilla to soft peaks, stopping before it stiffens so it stays light and pipeable.
- Fold the banana purée into the whipped cream, then quickly stir in the dissolved gelatine and a couple of drops of pink colouring until evenly tinted.
- Spoon the mixture into four glasses or ramekins, smooth the tops, and chill for at least 3 hours until softly set.
- Serve cold, decorated with a few slices of fresh banana brushed with lemon juice just before bringing to the table.
