How to make it

  1. Put the beef in a pot with the stock, water, bouillon cubes, bay leaves, dried onion and Worcestershire sauce, bring to a boil, then cover and simmer gently for about 2 hours until the meat shreds easily.
  2. Lift out the beef, discard the bay leaves, and reserve 1 cup of the cooking liquid; finely chop or shred the meat once cool enough to handle.
  3. Melt the butter in a saucepan, stir in the flour and cook for a minute, then gradually whisk in the reserved liquid to make a very thick paste; stir in the meat and season with salt and pepper.
  4. Spread the mixture on a tray and chill in the refrigerator for at least 2 hours, or until firm enough to shape.
  5. Shape the cold mixture into small logs or cylinders, then roll each in flour, dip in the beaten eggs, and coat thoroughly in breadcrumbs.
  6. Heat the oil to 180 C (350 F) and fry the croquettes in batches for 3 to 4 minutes until deep golden brown and heated through.
  7. Drain on paper towels and serve hot.
