Beef Croquettes

How to make it
- Put the beef in a pot with the stock, water, bouillon cubes, bay leaves, dried onion and Worcestershire sauce, bring to a boil, then cover and simmer gently for about 2 hours until the meat shreds easily.
- Lift out the beef, discard the bay leaves, and reserve 1 cup of the cooking liquid; finely chop or shred the meat once cool enough to handle.
- Melt the butter in a saucepan, stir in the flour and cook for a minute, then gradually whisk in the reserved liquid to make a very thick paste; stir in the meat and season with salt and pepper.
- Spread the mixture on a tray and chill in the refrigerator for at least 2 hours, or until firm enough to shape.
- Shape the cold mixture into small logs or cylinders, then roll each in flour, dip in the beaten eggs, and coat thoroughly in breadcrumbs.
- Heat the oil to 180 C (350 F) and fry the croquettes in batches for 3 to 4 minutes until deep golden brown and heated through.
- Drain on paper towels and serve hot.
