How to make it
- Heat the oven to 180 C (350 F) and line a baking tray with parchment paper. Take the butter out a little ahead of time so it is softened but not melted.
- Sift the flour, baking powder and salt into a large bowl, then rub in the softened butter with your fingertips until the mixture looks like fine breadcrumbs.
- Stir in the caster sugar, then add the egg yolk and milk and mix to bring everything together into a firm, smooth dough; add a few extra drops of milk only if it feels too dry to come together.
- Lightly flour a work surface and roll the dough out to about 5 mm thick, then cut into rounds or squares with a cutter and re-roll the trimmings.
- Arrange the biscuits on the lined tray, spacing them slightly apart, and prick each one a couple of times with a fork to stop them puffing up unevenly.
- Bake for 12 to 15 minutes, until the edges are pale golden and the biscuits feel firm on top.
- Leave the biscuits on the tray for a few minutes to firm up, then transfer to a wire rack to cool completely before storing in an airtight tin.
