How to make it
- In a bowl, whisk together the chickpea flour, baking powder, salt, turmeric, and paprika until evenly combined.
- Gradually whisk in the water or soy milk to form a smooth, lump-free batter the consistency of pancake batter, then let it rest for 10 minutes so the flour can hydrate.
- Heat 1 tablespoon of the olive oil in a nonstick skillet over medium heat, add the chopped onion, and cook for 2 to 3 minutes until softened, then stir in the spinach until just wilted.
- Pour the batter over the vegetables in the pan, tilting to spread it into an even round, and cook over medium heat for 3 to 4 minutes until the underside is set and golden and the edges lift easily.
- Slide a spatula underneath and flip the omelette carefully, then cook the second side for another 2 to 3 minutes until firm in the center with no wet batter remaining.
- Slide onto a plate, drizzle with the remaining olive oil, cut into wedges, and serve warm.
