How to make it

  1. Crumble the leftover hamburger patties into bite-sized pieces and set aside. Dice both onions and finely chop the garlic and the chipotle peppers.
  2. Heat the vegetable oil in a large heavy pot over medium heat, add the sweet and red onions with a pinch of salt, and cook for 6 to 8 minutes until soft and translucent.
  3. Stir in the garlic, cumin and chili powder and cook for about 1 minute until fragrant, taking care not to let the spices scorch.
  4. Add the crumbled hamburger and the chopped chipotle peppers and stir for 2 to 3 minutes so the meat takes on the spices.
  5. Pour in the crushed tomatoes, stock and drained kidney beans, stir well, and bring to a simmer.
  6. Lower the heat and simmer uncovered for 30 to 40 minutes, stirring occasionally, until the chili thickens and the flavours meld; add a splash of stock if it gets too dry.
  7. Taste and adjust the salt and chili powder, then serve hot with your choice of toppings.
