How to make it
- Heat the oven to 180 C (350 F) and butter a 23 cm (9 inch) round baking dish or springform tin.
- Peel, halve, and core the pears, then cut them into thick slices and arrange them evenly across the bottom of the dish.
- Chop the chocolate and butter together and melt gently in a heatproof bowl set over barely simmering water, stirring until smooth, then remove and let cool for a few minutes.
- Separate the eggs, then beat the yolks with the sugar and vanilla until pale and thick, and whisk the melted chocolate and the flour into this mixture.
- In a clean bowl, whip the egg whites to soft peaks, then fold them into the chocolate batter in two additions, keeping the mixture light and airy.
- Pour the batter over the pears, smooth the top, and bake for 30 to 35 minutes until the top is set and crackled but the center is still slightly soft.
- Cool for at least 15 minutes so it firms up, then serve warm or at room temperature with the lightly whipped cream alongside.
