How to make it
- Peel and core the apples, then cut each into eight even wedges so they cook at the same rate.
- Melt the butter in a large skillet over medium heat until it foams, then add the apple wedges in a single layer.
- Sprinkle the sugar, cinnamon and a pinch of salt over the apples and cook, turning occasionally, for 6 to 8 minutes until the wedges begin to soften and caramelize.
- Carefully pour in the brandy and let it bubble for about 30 seconds to cook off the raw alcohol, scraping up any caramel from the bottom of the pan.
- Add the fresh orange juice and continue cooking for 2 to 3 minutes, gently tossing, until the liquid reduces into a glossy glaze that coats the apples.
- Taste and adjust with a little more cinnamon if desired, then spoon the apples and their glaze into bowls and serve warm.
