How to make it
- Soak the china grass strands in the tender coconut water for about 15 minutes so they soften.
- Transfer the soaked china grass with its water to a small saucepan and heat gently while stirring, bringing it to a brief simmer until the strands fully dissolve into a clear liquid.
- In a separate pan warm the milk with the condensed milk, sugar and cardamom over low heat, stirring until the sugar dissolves, then keep it warm and not cold.
- Pour the dissolved china grass mixture into the warm milk in a thin stream while stirring constantly so it blends smoothly without lumps or setting prematurely.
- Stir in the chopped tender coconut flesh, then divide the mixture among four serving bowls or a single dish.
- Let the pudding cool to room temperature, then refrigerate for at least 3 hours until fully set, and serve chilled.
