How to make it
- Preheat the oven to 180 C (350 F) and soak the dried apricots in warm water for 10 minutes, then drain and chop them roughly.
- Finely chop the onion and soften it gently in half the butter until translucent, then stir in the chopped apricots, breadcrumbs, thyme, half the salt and pepper, and bind with the beaten egg.
- Open out the boned leg of mutton, spoon the apricot stuffing into the cavity, then roll it up and tie firmly at intervals with kitchen string into a neat joint.
- Rub the outside with the remaining butter, season with the rest of the salt and pepper, and place in a roasting tin.
- Roast for about 30 minutes per 500 g, basting occasionally, and brush the honey over the joint for the final 20 minutes to glaze.
- Because the joint is rolled around an egg-and-breadcrumb stuffing, cook until a meat thermometer inserted into the thickest part of the meat reads at least 71 C (160 F) and the centre of the stuffing reaches 74 C (165 F).
- Tent the joint loosely with foil and rest for 15 minutes before snipping off the string, carving into slices and serving with the pan juices.
