Grilled Lamb Chops

How to make it
- Pat the lamb chops dry with paper towel and let them sit at room temperature for about 20 minutes so they cook evenly.
- Mince the garlic and finely chop the rosemary and thyme, then stir them together with the olive oil, smoked paprika, cayenne, black pepper and a good pinch of salt to make a paste.
- Rub the paste all over the chops, pressing it into both sides, and marinate for at least 30 minutes or up to 4 hours in the refrigerator.
- Heat a grill or griddle pan to high; the surface should be hot enough that a drop of water sizzles instantly.
- Grill the chops for 3 to 4 minutes on the first side without moving them so a crust forms, then turn and grill 3 to 4 minutes more for medium, reaching an internal temperature of about 63 C (145 F) for medium, or longer if you prefer them more done.
- Stand the chops on their fatty edge for a final minute to render and crisp the fat, then transfer to a board.
- Tent loosely with foil and rest for 5 minutes before serving, finished with a squeeze of fresh lemon.
