How to make it

  1. Pat the lamb chops dry with paper towel and let them sit at room temperature for about 20 minutes so they cook evenly.
  2. Mince the garlic and finely chop the rosemary and thyme, then stir them together with the olive oil, smoked paprika, cayenne, black pepper and a good pinch of salt to make a paste.
  3. Rub the paste all over the chops, pressing it into both sides, and marinate for at least 30 minutes or up to 4 hours in the refrigerator.
  4. Heat a grill or griddle pan to high; the surface should be hot enough that a drop of water sizzles instantly.
  5. Grill the chops for 3 to 4 minutes on the first side without moving them so a crust forms, then turn and grill 3 to 4 minutes more for medium, reaching an internal temperature of about 63 C (145 F) for medium, or longer if you prefer them more done.
  6. Stand the chops on their fatty edge for a final minute to render and crisp the fat, then transfer to a board.
  7. Tent loosely with foil and rest for 5 minutes before serving, finished with a squeeze of fresh lemon.
