How to make it

  1. Preheat the oven to 220 C (425 F) and generously grease a cast-iron corn stick pan, then place it in the oven to heat while you mix the batter.
  2. In a large bowl, whisk together the cornmeal, flour, baking powder, sugar and salt until evenly combined.
  3. In a separate bowl, beat the egg, then whisk in the milk and the melted shortening.
  4. Pour the wet ingredients into the dry ingredients and stir just until combined, being careful not to overmix; a few lumps are fine.
  5. Carefully remove the hot pan, spoon the batter into each mold until about three-quarters full, and return it to the oven.
  6. Bake for 12 to 15 minutes until the corn sticks are golden brown and a toothpick inserted in the center comes out clean.
  7. Turn the corn sticks out of the pan and serve warm with butter.
