How to make it

  1. Preheat the oven to 425 F and pat the chicken thoroughly dry inside and out with paper towels.
  2. Soften the butter and mix it with the country roast seasoning, then rub it all over the skin and gently under the breast skin where you can reach.
  3. Halve the lemon and stuff both halves into the cavity along with the rosemary and thyme sprigs, then season the bird all over with salt.
  4. Tie the legs together with kitchen twine and tuck the wing tips under, then set the chicken breast-side up on a rack in a roasting pan.
  5. Roast for 20 minutes at 425 F, then lower the oven to 375 F and continue roasting for about 60 to 75 minutes, basting once or twice with the pan juices.
  6. Check that the thickest part of the thigh reaches an internal temperature of 165 F (74 C) and the juices run clear.
  7. Transfer the chicken to a board, tent loosely with foil, and rest for 10 to 15 minutes before carving so the juices redistribute.
