Country Roast Chicken

How to make it
- Preheat the oven to 425 F and pat the chicken thoroughly dry inside and out with paper towels.
- Soften the butter and mix it with the country roast seasoning, then rub it all over the skin and gently under the breast skin where you can reach.
- Halve the lemon and stuff both halves into the cavity along with the rosemary and thyme sprigs, then season the bird all over with salt.
- Tie the legs together with kitchen twine and tuck the wing tips under, then set the chicken breast-side up on a rack in a roasting pan.
- Roast for 20 minutes at 425 F, then lower the oven to 375 F and continue roasting for about 60 to 75 minutes, basting once or twice with the pan juices.
- Check that the thickest part of the thigh reaches an internal temperature of 165 F (74 C) and the juices run clear.
- Transfer the chicken to a board, tent loosely with foil, and rest for 10 to 15 minutes before carving so the juices redistribute.
