How to make it

  1. Melt the butter in a wide skillet over medium heat, then add the finely diced red bell pepper and cook for 2 to 3 minutes until softened.
  2. Add the corn kernels and cook, stirring, for about 4 minutes until heated through and lightly glossy.
  3. Sprinkle the flour over the corn and stir constantly for 1 minute to cook out the raw taste without browning.
  4. Pour in the cream and milk, add the sugar, and stir to combine, scraping the bottom of the pan.
  5. Bring to a gentle simmer and cook for 6 to 8 minutes, stirring often, until the sauce thickens and coats the kernels.
  6. For a creamier texture, lightly mash a portion of the corn against the side of the pan with a spoon or briefly blend a ladleful and stir it back in.
  7. Season with salt and black pepper to taste, then serve warm.
