How to make it
- Melt the butter in a wide skillet over medium heat, then add the finely diced red bell pepper and cook for 2 to 3 minutes until softened.
- Add the corn kernels and cook, stirring, for about 4 minutes until heated through and lightly glossy.
- Sprinkle the flour over the corn and stir constantly for 1 minute to cook out the raw taste without browning.
- Pour in the cream and milk, add the sugar, and stir to combine, scraping the bottom of the pan.
- Bring to a gentle simmer and cook for 6 to 8 minutes, stirring often, until the sauce thickens and coats the kernels.
- For a creamier texture, lightly mash a portion of the corn against the side of the pan with a spoon or briefly blend a ladleful and stir it back in.
- Season with salt and black pepper to taste, then serve warm.
