Crispy Salmon

How to make it
- Pat the salmon fillets dry with paper towels and season them all over with salt and freshly ground black pepper.
- Set up three shallow bowls: one with the flour, one with the eggs beaten together with the dijon mustard, and one with the panko mixed with the chopped dill.
- Coat each fillet first in the flour, shaking off the excess, then in the egg, and finally press it firmly into the panko so the crumbs adhere on all sides.
- Heat the olive oil in a large oven-safe skillet over medium-high heat until shimmering.
- Lay the fillets in the pan crumb-side down and sear for about 3 minutes until golden, then carefully turn them over and cook the other side for 2 minutes.
- Transfer the skillet to a 200 C oven and finish for 5 to 7 minutes, until the salmon is opaque, flakes easily, and reaches an internal temperature of 63 C at the thickest part.
- Squeeze the fresh lemon juice over the crispy fillets and serve immediately.
