How to make it

  1. Pat the salmon fillets dry with paper towels and season them all over with salt and freshly ground black pepper.
  2. Set up three shallow bowls: one with the flour, one with the eggs beaten together with the dijon mustard, and one with the panko mixed with the chopped dill.
  3. Coat each fillet first in the flour, shaking off the excess, then in the egg, and finally press it firmly into the panko so the crumbs adhere on all sides.
  4. Heat the olive oil in a large oven-safe skillet over medium-high heat until shimmering.
  5. Lay the fillets in the pan crumb-side down and sear for about 3 minutes until golden, then carefully turn them over and cook the other side for 2 minutes.
  6. Transfer the skillet to a 200 C oven and finish for 5 to 7 minutes, until the salmon is opaque, flakes easily, and reaches an internal temperature of 63 C at the thickest part.
  7. Squeeze the fresh lemon juice over the crispy fillets and serve immediately.
