How to make it
- Preheat the oven to 350°F (175°C) and line an 8-inch square baking pan with parchment paper, leaving a slight overhang for easy lifting.
- Chop the pitted dates into small pieces and toss them with the walnuts and a tablespoon of the measured flour so they stay separated in the batter.
- In a large bowl, beat the eggs with the granulated sugar and vanilla until pale and slightly thickened, about 2 minutes.
- Whisk the remaining flour, baking powder and salt together, then fold the dry mixture into the egg mixture until just combined.
- Gently stir in the floured dates and walnuts, distributing them evenly, then spread the stiff batter into the prepared pan.
- Bake for 25 to 30 minutes, until the top is golden and a toothpick inserted in the center comes out with only a few moist crumbs.
- Let the bars cool completely in the pan, then lift them out, dust with powdered sugar and cut into squares.
