How to make it

  1. Chill the chocolate caramel bars in the refrigerator for at least 30 minutes, or freeze briefly, so the chocolate stays firm and does not collapse into the hot oil.
  2. Whisk the flour, baking powder and salt together in a bowl, then beat in the egg and gradually whisk in the milk to make a smooth batter the thickness of pouring cream.
  3. Pour the oil into a deep heavy saucepan, filling it no more than halfway, and heat to 180°C (350°F), using a thermometer and never leaving hot oil unattended.
  4. Unwrap a chilled bar and dip it into the batter, turning to coat it completely and letting any excess drip back into the bowl.
  5. Lower the coated bar carefully into the hot oil using a slotted spoon and fry for 1 to 2 minutes, turning once, until the batter is crisp and golden all over.
  6. Lift out with the slotted spoon and drain on kitchen paper, then repeat with the remaining bars, allowing the oil to return to temperature between batches.
  7. Rest each one for a minute so the molten centre cools slightly, then serve warm, on its own or with a scoop of vanilla ice cream.
