How to make it

  1. Cook the rice in plenty of salted water until just tender, drain well and set aside so the grains stay separate.
  2. Melt the chicken fat in a wide heavy skillet over medium-high heat, add the ground pork and chopped gizzards and cook, breaking up the meat, until browned and any liquid has cooked off, about 8 minutes.
  3. Add the onion, celery and bell pepper and cook until softened, then stir in the garlic, paprika, cumin, dry mustard, black pepper and bay leaf and cook for another minute until fragrant.
  4. Stir in the chopped chicken livers and cook for 2 to 3 minutes until they lose their raw color, then pour in the chicken stock and scrape up the browned bits from the bottom of the pan.
  5. Simmer uncovered until most of the liquid has reduced to a thick gravy that coats the meat, about 8 to 10 minutes; the pork, gizzards and livers should reach 74 C and be fully cooked through with no pink.
  6. Fold the cooked rice into the meat mixture and stir gently over low heat until every grain is coated and tinted brown and the dish is heated through.
  7. Remove the bay leaf, taste and adjust the salt and pepper, and serve hot.
