How to make it
- Preheat the oven to 180 C. Melt 50 g of the butter and pour it into the base of a 23 cm round cake tin, then sprinkle the brown sugar evenly over the melted butter.
- Drain the pineapple, reserving the juice, and arrange the slices in a single layer over the sugar, placing a glace cherry in the centre of each ring and in any gaps.
- In a bowl, whisk together the flour, baking powder and salt. In a separate large bowl, cream the remaining 50 g softened butter with the white sugar until pale and fluffy.
- Beat the eggs into the creamed mixture one at a time, then fold in the dry ingredients alternately with the milk and 2 tablespoons of the reserved pineapple juice until you have a smooth batter.
- Spoon the batter carefully over the pineapple and spread it level, taking care not to dislodge the fruit.
- Bake for 40 to 45 minutes until the cake is golden and a skewer inserted into the centre comes out clean.
- Let the cake stand for 5 minutes, then run a knife around the edge and invert it onto a serving plate so the caramelised pineapple sits on top, and serve warm.
