How to make it

  1. Preheat the oven to 180 C. Melt 50 g of the butter and pour it into the base of a 23 cm round cake tin, then sprinkle the brown sugar evenly over the melted butter.
  2. Drain the pineapple, reserving the juice, and arrange the slices in a single layer over the sugar, placing a glace cherry in the centre of each ring and in any gaps.
  3. In a bowl, whisk together the flour, baking powder and salt. In a separate large bowl, cream the remaining 50 g softened butter with the white sugar until pale and fluffy.
  4. Beat the eggs into the creamed mixture one at a time, then fold in the dry ingredients alternately with the milk and 2 tablespoons of the reserved pineapple juice until you have a smooth batter.
  5. Spoon the batter carefully over the pineapple and spread it level, taking care not to dislodge the fruit.
  6. Bake for 40 to 45 minutes until the cake is golden and a skewer inserted into the centre comes out clean.
  7. Let the cake stand for 5 minutes, then run a knife around the edge and invert it onto a serving plate so the caramelised pineapple sits on top, and serve warm.
