How to make it
- Preheat the oven to 175C (350F) and line a 20cm square baking tin with parchment paper, leaving an overhang for easy lifting.
- In a saucepan over low heat, melt the butter with the sugar and water, stirring until the sugar begins to dissolve, then remove from the heat just before it boils.
- Whisk the cocoa powder into the warm butter mixture until smooth, then let it cool for a few minutes so it will not cook the eggs.
- Beat in the eggs one at a time along with the vanilla, mixing until the batter is glossy and thick.
- Sift in the flour, baking soda and salt and fold gently until just combined, then stir through the dark chocolate chips.
- Scrape the batter into the prepared tin, smooth the top and bake for 28 to 32 minutes until the top is set and a toothpick inserted near the centre comes out with a few moist crumbs.
- Cool the brownies completely in the tin before lifting out and cutting into squares so they hold their fudgy texture.
