How to make it
- Mound the flour on a clean work surface or in a large bowl and make a well in the center, then crack in the eggs and add the salt, olive oil and wine.
- Using a fork, gently beat the eggs in the center, gradually drawing in flour from the inner walls of the well until a shaggy dough forms.
- Knead the dough firmly for 8 to 10 minutes until it becomes smooth and elastic, adding a little flour if it sticks, then wrap it and let it rest at room temperature for 30 minutes.
- Divide the dough into four pieces and, working with one at a time, roll each out on a floured surface as thinly as possible into a large sheet.
- Dust each sheet lightly with flour, loosely roll it up, and slice crosswise into ribbons of your preferred width, then unfurl the noodles and dust again to keep them from sticking.
- Bring a large pot of well-salted water to a rolling boil and cook the fresh noodles for 2 to 4 minutes, until just tender but still firm to the bite.
- Drain the noodles well and toss immediately with your chosen sauce, serving hot.
