How to make it
- If using fresh peas, blanch them in boiling salted water for 2 to 3 minutes, then drain and plunge into ice water to stop the cooking and keep their bright color; if using frozen peas, simply thaw and drain them well.
- Pat the peas dry and place them in a mixing bowl so the salad does not turn watery.
- Finely chop the white onion and peel and dice the hard-boiled eggs, keeping the yolks intact for richness.
- Add the mayonnaise, onion and eggs to the peas and fold gently to combine without crushing the peas.
- Season with salt and black pepper to taste, then cover and chill for at least 30 minutes to let the flavors meld.
- Just before serving, stir once more, then transfer to a serving bowl and garnish with chopped fresh parsley.
